Ingredients
•Cauliflower,grated 1 medium
•Oil 2 tablespoons
•Asafoetida 1/4 teaspoon
•Cumin seeds 1 teaspoon
•Garlic,finely chopped 8-10 cloves
•Ginger,finely chopped 2 inch piece
•Green chillies,finely chopped 3
•Cashewnuts,finely chopped 12-15
•Red chilli powder 1 teaspoon
•Turmeric powder 1/4 teaspoon
•Coriander powder 1 teaspoon
•Salt to taste
•Yogurt 1/2 cup
•Fresh coriander leaves,finely chopped 2 tablespoons + for garnishing
Method
Heat oil in a non stick pan, add asafoetida and cumin seeds and sauté till fragrant. Add garlic, ginger and green chillies and sauté on low heat.
Add cashewnuts and cauliflower and mix. Add red chilli powder, turmeric powder, coriander powder and sauté for 1-2 minutes.
Add salt and mix well. Add yogurt and fresh coriander and mix well.
Transfer into a serving bowl, garnish with fresh coriander leaves and serve hot.
