Ingredients
•Pineapple,peeled 1
•Jaggery (gur),Dissolved in water 1 1/2 cups
•Ghee 1/4 cup
•Cashewnuts 6-8
•Raisins 2 tablespoons
•Dry ginger powder (soonth) 1/4 teaspoon
•Green cardamom powder 1/4 teaspoon
•Coconut milk,powder 1/4 cup
•Fresh coconut ,chopped 2 tablespoons
Method
Chop pineapple into small pieces. Heat ghee in a non-stick pan and fry cashewnuts and raisins till golden brown. Add coconut pieces and mix. Add pineapple and mix well.
Add jaggery water and stir till it thickens. Add dry ginger powder, cardamom powder and mix.Mix coconut milk powder with a little water to make a paste. Turn off heat and add this paste to the pineapple mixture and mix well. Serve warm or at room temperature.
